Lightlife Lentils with Garlic & Smart Ground – Recipe Review

After seeing my Biscuits & Gravy post, where I utilized their yummy breakfast sausage, Lightlife reached out to me to see if I’d make one of their recipes and review it on my blog as part of October’s Vegetarian Awareness month.

So I just made this recipe tonight, and am eating it as we type this. It is a great, hearty, savory dish that makes you feel at home. I also really love this dish because it is a one-pot meal (yes #OnePotMeal #LOVEit!). I am not a fan of washing dishes, so on a weeknight this is the perfect meal to cook.

Also, after they reached out to me I read a little about Lightlife, and it seems like a great company. They contribute 5% of their profits to organizations that support the earth, and they began in 1979, which I found impressive since vegetarianism wasn’t too huge at that time. So between being pioneers for the veggie meat world and giving back, I feel good about buying their products.

First I was very curious to see what the Smart Grounds looked and tasted like, and how they cooked up. I had never used them before today. The package looks very small, but once you pour out the Smart Grounds and break them up, they disperse and get a little bigger. Their texture, color, and flavor was incredibly reminiscent of meat.


It was such an easy recipe! Just brown the Smart Grounds, add the seasonings and cook for 30 seconds more (this really helps bring out the flavor of the dried seasonings), then toss in the rest of the ingredients, bring to boil and cover to finish the cooking.

Bring the mixture to a boil, then cover and let simmer for 15-18 mins. When you uncover, it smells delicious and looks like this!

Then just discard the bay leaf and serve!


Mine was just a teeny bit on the salty side, but that may be dependent on what type of vegetable broth you use. Anyways, it does not hurt to put less salt and then add more at the end if needed!


All-in-all, I will definitely be making this recipe again due to how easy it will be for weekdays and how tasty & filling it is! Highly recommend.
